The Famille Castillon has an estate that covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. Michel and Jérôme Castillon, the domain's owners, are counted amongst the Rhône valley's most dynamic and talented winegrowers. The work that they accomplish allows the grape to breathe out and the use of oak barrels for ageing is restricted as much as possible. As mentioned above, today it’s the ninth generation of the « Castillon family » that rule this domain in “Costières de Nîmes",Through its knowledge and its experience, the “Castillon family” run the fantastic terroir of the southern slope of the appellation. Taking its benefits from a southern exposure and a Mediterranean maritime breeze, this terroir permits as much to keep an aromatic freshness on white wines as being the perfect terroir for the “Mourvèdre”.
Vineyard
The "Victor" is named for the first member of the Castillon family to own the property.
Rolled Durance pebbles (the Durance river flowed through the valley well before the Rhône). Vines are organically grown : 25 years - 22 acres Yield : 2.5T/acre.
Winemaking
Cooling of the harvest (reduction of 12°C / 54°F). Fermentation period of 3
days to extract the anthocyans and aromatic components. Short maceration of
8 days.
Ageing : In concrete tanks, no ageing in the barrel
Tasting notes
Bright garnet colour. Full taste with a good fruity and spicy structure. A “thirst-quenching” wine with supple tannins.
Food pairing
Barbecue, T-bone steak, lamb chops, “cévenole” chitterlings sausage, matured cheese.
