The Famille Castillon has an estate that covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. Michel and Jérôme Castillon, the domain's owners, are counted amongst the Rhône valley's most dynamic and talented winegrowers. The work that they accomplish allows the grape to breathe out and the use of oak barrels for ageing is restricted as much as possible. As mentioned above, today it’s the ninth generation of the « Castillon family » that rule this domain in “Costières de Nîmes",Through its knowledge and its experience, the “Castillon family” run the fantastic terroir of the southern slope of the appellation. Taking its benefits from a southern exposure and a Mediterranean maritime breeze, this terroir permits as much to keep an aromatic freshness on white wines as being the perfect terroir for the “Mourvèdre”.
Vineyard
The "Victor" is named for the first member of the Castillon family to own the property.
Rolled Durance pebbles (the Durance river flowed through the valley well before the Rhône). Vines are organic grown: 25 years old
vines - 22 acres - Yield : 2.5T/acre.
Winemaking
Cooling of the harvest in the hopper immediatley on reception (reduction of
12°C / 54°F). Ble rosé. The bleeding takes place 24h after the harvest for the
Syrah and 48h after the harvest for the Grenache. Thermoregulated fermentation between 61 and 65°F.
No ageing .
Tasting notes
Brightly salmon pink colour with an explosion of fruit. Roundness and a well-balanced harmony of spices and fruits.
Food pairing
Spicy or exotic food, Bouillabaisse, lamb chops with Provence herbs.
Aging potential
To be drunk straight away and for 2 years.
