The Cave des vignerons de Tavel is in the purest Provençal style. It was built in 1937 when Tavel wines were labelled AOC. It is to date the only winery to be opened by a President of the Republic – Albert Lebrun in 1938. The Cave de Tavel produces half of the Tavel AOC wines, as well as Lirac, Côtes-du-Rhône Villages and Côtes-du-Rhône and stretches over 680 Ha..There are 140 producers, all involved in the day-to-day life of the winery and have their say in the investment decisions for making wines which frequently win medals and are regularly mentioned in wine guide. The Domaine le Puy d'Eole is a private estate . Two Cave de Tavel's winegrowers work the vineyard.

Winemaking
Maceration for 5 weeks, combined with Pumping over. Temperature control for refrigeration if necessary.
Tasting notes
Eye: bright deep crimson shot through with mauve. Nose: animally, ripe fruit, caramel. Mouth: soft attack, good structure, aftertaste of liquorices, notes of toast at the end. Lirac is a Cru which associates elegancy and corpulence.
Food pairing
Best served at 61 -64 °F . Perfect with casseroles, game, red meat, rib of beef, shoulder of lamb, unpasteurised or hard cheese.

Composed of Syrah and Grenache, this Lirac opens to inviting aromas of dark cherries and red berries followed by lavendar, wild game, licorice, pepper, sweet spices and stony minerals all taking shape. On the palate this medium-bodied red is well-structured with silky tannins resulting in a soft mouthfeel that lead up to the racy finish. This is a lovely wine to approach upon release or allow a few years in the cellar to develop.
