Chateau de Brasse White
Summum Wines - Limoux

history
The Château de Brasse and its aqueduct, a remarkable gateway to the property, have belonged to the Latude family since 1719. The know-how of the ten successive generations at the head of this vineyard today allows all the potential of chardonnay and chenin grape varieties.
Vineyard
Located between the municipalities of Limoux and Alet Les Bains, the Château de Brasse stands at the foothills of the Pyrenees on the banks of the Aude. The most beautiful plots, located on the hillsides of the property, have been selected to produce this cuvée in AOP Limoux.
Winemaking
All the grapes are harvested by hand, sorted on belts. For the white, the decree of the AOP Limoux appellation leads to vinification in oak barrels. Regular stirring allows the wine to be “nourished” before being aged in barrels for 8 to 9 months.
Tasting notes
The robe, straw yellow, has silver reflections. The floral and white-fleshed fruit notes reveal themselves on the palate with well-controlled fatness and freshness. The minerality and length of this wine bode well for good aging potential. This wine should be enjoyed at 12°, taking care to decant it 30 minutes before serving it.
Food pairing
This white Limoux AOP is the ideal accompaniment to scallops, grilled sea bass, marinated red tuna, cod and its homemade truffle mash or even a goat cheese platter.
