The Château de Brasse and its aqueduct, a remarkable gateway to the property, have belonged to the Latude family since 1719. The know-how of the ten successive generations at the head of this vineyard today allows all the potential of the Merlot, Syrah and Cabernet-Sauvignon grape varieties.
Vineyard
Located between the municipalities of Limoux and Alet Les Bains, the Château de Brasse stands at the foothills of the Pyrenees on the banks of the Aude.
The most beautiful plots, located on the hillsides of the property, have been selected to produce this cuvée in AOP Limoux.
Winemaking
All the grapes are harvested by hand and sorted on belts. Each grape variety is vinified separately at controlled temperature. A cold pre-fermentation maceration is carried out for the Syrah and a long maceration of 30 days for the Merlot and the Cabernet-Sauvignon. The wines are then blended and aged in French oak barrels for 9 to 10 months.
Tasting notes
The robe, with purple reflections, is sustained and deep. The notes of black fruits are very present with a very elegant woodiness. In the mouth, the structure is silky and complex with a very nice balance.
Food pairing
This red Limoux AOP will go perfectly with a duck breast, a nice piece of beef, a dessert with red fruits and chocolate, or even with a platter of charcuterie and cheese from Occitanie.
