history
Renowned for its wines from high-altitude vineyards, the Haute Vallée de l'Aude, with its red Cretaceous soils, is also Europe's main deposit of fossils of the last dinosaurs. In Latin, Ampelosaurus Atacis (- 70 million years), means dinosaur (lizard) of the Aude vineyard. This articulated “Titanosaur” is one of two specimens, unique in the world to date, whose scientific name evokes our region, the place of their discovery.
Vineyard
Our plots are located in the Haute Vallée de l'Aude, between 200 and 350 m above sea level, on red, clay-ferrous soils.
Winemaking
After direct pressing then cold settling, the Chardonnay will be vinified in small thermo-regulated vats. It will then be aged in barrels for five to six months.
Tasting notes
The "Dino Chardonnay" is a golden and shiny color, a delicate nose of white flowers, hawthorn and acacia. On the palate, it's elegance, slightly lemony and toasted white peach notes with a fresh finish.
Food pairing
Will go wonderfully with fish in foil, poultry with lemongrass, goat cheese.
