history
Renowned for its wines from high-altitude vineyards, the Haute Vallée de l'Aude, with its red Cretaceous soils, is also Europe's main deposit of fossils of the last dinosaurs. Literally, Gargantuavis Phyloïnos (- 70 million years), means the Gargantua bird who loves wine. This high school bird and its two meters high, is one of the two specimens whose scientific name evokes our land, place of their discovery.
Vineyard
Our plots are located in the Haute Vallée de l'Aude, between 200 and 350 m above sea level, on red, clay-ferrous soils.
Winemaking
Pre-fermentation cold maceration, alcoholic fermentation and daily punching down. The wine is then aged in wooden vats and barrels and then blended.
Tasting notes
To be served between 12 and 14°C The “Dino Pinot” has a deep ruby ​​color, a nose of morello cherries, red fruits. In the mouth, it is the balance, the roundness and this slightly kirsch fruit which evolves in the finish towards notes of hazelnut, vanilla.
Food pairing
Braised meat, veal tenderloins, a can of barbarism or a guinea fowl with porcini mushrooms and why not a farm sheep's cheese will be perfect allies for this Pinot noir from the Haute Vallée de l'Aude.
