The Orchis range includes twelve varietal wines. Each of them reveals their specificity on their terroir of origin: Limoux (Languedoc Roussillon). Summum wines by Anne de Joyeuse, in her “Protect Planet” approach, sees her environment enriched. Thus, today we count more than eighty species of orchids in our vines. The best known being the bee orchid.
Vineyard
Close monitoring of small plots of Pinot Noir in a sustainable viticulture approach. Observation of the natural cycles of the vine and development of biodiversity. Our vines, located in the Haute Vallée de l'Aude, on clay-limestone soils, benefit from a large thermal amplitude thanks in particular to the influence of the Pyrenean climate.
Winemaking
Cold pre-fermentation maceration, alcoholic fermentation and daily punching down.
Tasting notes
To be enjoyed slightly chilled between 12 and 14°C. Pretty cherry red colour, a slightly kirsch red fruit nose, a lively and fresh mouthfeel.
Food pairing
Supple and well balanced, this wine will go well with a shoulder or a leg of lamb truffled with garlic and accompanied by white beans or quite simply as an aperitif accompanied by some tapas.
