history
The vines are located in the amazing Languedoc region between the aquamarine creeks of the Mediterranean coast and the majestic snow-capped summits of the Pyrenees. In this marvellous area they selected the fittest vines on the most prestigious soils. Perfectly ripe grapes are vinifed with the fittest technology to make fruity and well balanced wines to be enjoyed at any occasion.
Vineyard
Corbières Region, near the city of Carcassonne in the South of France. Selected plots in the Aude on gravel with good water retention. Vines : 15 to 20 years - Yield : 3.5 T/acre.
Winemaking
Ripening moderately late the lauded Cabernet-Sauvignon is to be found in al the great red wine- producing regions – with the exception of Burgundy. It produces wines with deep colour and rich body and tannin which always bode will for longevity. Machine harvesting and crushing prior to 15 days fermentation in glass-lined cement vats. Light filtration at bottling. Glass-lined cement vats.
Tasting notes
Colour: Intense ruby. Bouquet: Fruity; blackcurrant and blackberry aromas, spices and green pepper. Palate: Supple and balanced; logical follow-through from the bouquet.
Food pairing
Typical local dishes; poultry in sauces; Ripe cheeses. Serve at 59-61°F.
Aging potential
To be enjoyed young but also for 4 to 6 years.
