Michel and Jérôme Castillon, the domain's owners, are counted amongst the Rhône valley's most dynamic and talented winegrowers. The work that they accomplish allows the grape to breathe out and the use of oak barrels for ageing is restricted as much as possible.
Vineyard
The Costières de Nîmes are situated in the Rhône valley's most southern part, on the opposite bank of the Rhône with regards to Chateauneuf-du-Pape./nRolled Durance pebbles (the Durance river flowed through the valley well before the Rhône)./n25 years/n20.5 hectares / approx. 12 500 cases/n50 HI/Ha (2.5T/acre)
Winemaking
Cooling of the harvest (reduction of 12°C / 60°F). Pre-fermentation period of 3 days to extract the anthocyans and aromatic components. 4 delestages (rack and return) and thermorequlated fermentation. 6 months in a large oak barrel.
Tasting notes
Fresh and very fruity. A "thirst-quenching" wine that is a little tannic but mellow.
Food pairing
Barbecue. T-bone steak. lamb chops, "cévenole" chitterlings sausage, matured cheeses.
Aging potential
To be drunk straight away or to be aged in the cellar.
