history
Michel and Jérôme Castillon, the domain's owners, are counted amongst the Rhône valley's most dynamic and talented winegrowers. The work that they accomplish allows the grape to breathe out and the use of oak barrels for ageing is restricted as much as possible.
Vineyard
The Costières de Nimes are situated in the Rhône valley's most southern part. On the opposite bank of the Rhône with regards to Chateauneuf-du-Pape./nRolled Durance pebbles (the Durance river flowed through the valley well before the Rhône)./n20 years/n6.5 hectares / approx. 3 750 cases/n50 HI/Ha (2.5T/acre)
Winemaking
Cooling of the harvest immediately on reception of the grapes (reduction of 54°F). Cooling of the must for natural clarification. Vinification at a low temperature(60°F). Ageing on fine lees: 3 months.
Tasting notes
A perfect balance between the fleshiness of the Grenache blanc and the acidity of the Roussane grape. It is rare to find a white wine from South of France with such a good acidity level.
Food pairing
As an aperitif, but also with asparagus, fish, white meat "à la crème", veal chops "forestière".

For 2 years.
