history
The Cave des vignerons de Tavel is in the purest Provençal style. It was built in 1937 when Tavel wines were labelled AOC. It is to date the only winery to be opened by a President of the Republic – Albert Lebrun in 1938. The Cave de Tavel produces half of the Tavel AOC wines, as well as Lirac, Côtes-du-Rhône Villages and Côtes-du-Rhône and stretches over 680 Ha..There are 140 producers, all involved in the day-to-day life of the winery and have their say in the investment decisions for making wines which frequently win medals and are regularly mentioned in wine guide.
Vineyard
Production area: Tavel surrounding area (Rochefort du Gard, Pujaut and Sauveterre). Size of the Vineyard: 60 hectares Yield: 45 hl/ha Age of the vines: 25 years
Winemaking
Harvest is destemmed. Vating for 3 weeks. Pumping-over several times during the alcoholic fermentation. Temperatures are monitored to see if refrigeration is necessary at the start of fermentation and to raise them smoothly and gradually during fermentation.
Tasting notes
Eye: bright lively garnet red Nose: powerful, aromas of spice and red fruit. Mouth: soft attack, structured and mellowed, good long finish Best served at 61 -65 ° F
Food pairing
This wine goes perfectly with grilled red and white meat, charcuterie, tarts, fresh pasta, Lasagne or Cannelloni and cheese.

The 2021 Côtes du Rhône opens to fresh aromas of wild raspberries and hints of red plums woven together with lavender, spices, herbs and minerals all coming together in the glass. On the palate this possesses a medium body that is structured with fine tannins and underlined by lovely acidity keeping it bright and juicy through the finish.
