Domaine Fourrey et Fils is a family estate spanning 20 hectares, with 18 hectares currently in production, located in the heart of Chablis. The winemaking process artfully blends traditional Chablisian methods with modern techniques to highlight the unique characteristics of the Chardonnay grape. The estate has been passed down through four generations, from father to son. Since 1992, Jean-Luc has led the winemaking efforts alongside his parents, following his studies at the Lycée de Beaune, where he earned a degree in winemaking techniques. One of his primary goals upon returning from school was to enhance bottle sales. For the past ten years, his sister, Marie-José, has managed customer relations and is now actively involved in promoting wine tourism in the Chablis region.
Vineyard
In 2012, the year his son Emile was born, Jean-Luc Fourrey planted two vineyard plots: one facing south and the other northwest. This cuvée is dedicated to his son and serves as a contrast to the older vines. It comes from these two specific plots, covering an area of 0.9 hectares. The vines, approximately ten years old, are situated on clay-limestone soil.
Winemaking
The harvest is conducted mechanically, and the grapes are then gently pressed. This is followed by a settling period lasting between 24 and 72 hours. Fermentation takes place in thermoregulated stainless steel tanks, followed by a lengthy aging process that also occurs in stainless steel tanks. The wine is then bottled 18 months after the harvest.
Tasting notes
This dry white Chablis stands out for its complexity, offering breadth and length on the palate. It presents a distinct style of Chablis, shifting focus from minerality to a more expansive taste profile.
