Vineyard
Granitic and Clay-limestone, South-East exposure. Gamay grape variety: medium, cylindrical, compact clusters. Grains of a beautiful purple black. Thin skin, abundant juice. this variety is produced on 360 hectares, i.e. 18% of the Savoyard vineyard.
Winemaking
Manual harvest. Cuvage for 5 to 7 days, then the vat is drained and the free run wine is isolated. Once the alcoholic fermentation is complete, malolactic (second fermentation) should be triggered, which transforms the malic acid of the grapes into lactic acid. The latter lowers the acidity of the wine and avoids fermentation in the bottle. This “malolactic” makes it possible to obtain wines that are fuller and longer in the mouth, which will keep over time.
Tasting notes
Colour: light ruby. Nose: red fruits, strawberry, raspberry and blackberry. Mouth: round and lively, frank attack.
