The Dubard Family for more than 30 years, has been the most famous producer of refreshing and reasonably priced wines in South-West France. The family members offer differing personalities of graduate oenologists, winemakers, and viticulturists who together make up a dynamic and passionate team that has been renowned in the Bergerac wine region for decades. Being receptive to their terroir, combining common sense and long experience with ceaseless wine-making and viticulture: are the founding principles on which the family has relied in their exceptional cuvées. They are also ongoing on the environmental label "HVE" (High Environmental Value).
Vineyard
The Dubard family settled down as winemakers in the Bergerac region, in the late 70s. A situation of these vines on calcareous-clayish hillsides exposed to sunlight (South South-West), and a trellising thoroughly adapted to the spacing between rows maximize maturation. Sustainable farming leads to the protection of the environment and of the “terroir” personality. It also guarantees an excellent sanitary state of the crop, and thus its final quality.
Winemaking
After de-stemming and crushing, the grapes are directly transferred to stainless tanks upon their arrival in the cellar. The temperature is first maintained rather low (15°C) for a few days, to maximize flavor extraction. The juice then undergoes a short (2 weeks) and rather cool (26°C) fermentation, during which daily pumping-over is realized. Such a short maceration run with quite low temperatures preserves fruity aromas and supple tannins. As soon as the fermentation is finished, the wine is drained into stainless tanks, where the malolactic fermentation and the ageing are carried out, prior to the components being racked out and blended.
Tasting notes
The Pech de Neyrat reveals a bouquet of red fruits on the nose, a the potential that is confirmed on the palate by notes of blackcurrant and undergrowth with a smooth, full-bodied attack and vanilla and spicy fragrances on the finish.
Food pairing
This deep, intense red wine is a wonderful accompaniment to terrines, red meats, confits, duck breast, cassoulet, grilled poultry, or poultry in sauce, as well as many pieces of cheese. Pech de Neyrat is best enjoyed at a serving temperature of 64°F, and enjoyed in its youth (5 years of ageing potential)
