This oak-aged varietal wine is the result of passion and reasoned viticulture. The grapes are carefully selected among our vineyards located on the different terroirs of Limoux (Languedoc Roussillon). Thanks to the diversity of climate and soils, this wine develops a wide range of nuances both on the nose and on the palate.
Vineyard
Our methods of cultivation are based on the observation of the natural plant cycles of vines and the development of biodiversity. Our vineyards, planted on clay and limestone soils, are located in the Atlantic, Mediterranean and Pyrenean climatic zones.
Winemaking
Alcoholic fermentation is followed by approximately 3 weeks of maceration in large tanks. Pneumatic pressing, then malolactic fermentation and ageing in oak barrels (one-third new, one-third used for a previous vintage, and one-third used for two previous vintages.)
Tasting notes
Appearance: Dark cherry red color. ​ Nose: Cherry, black, and red currants at the outset followed by strawberry and a touch of salt. ​ Taste: Balanced structure with fine tannins and a nice sour taste on the finish.
Food pairing
Roast chicken with herbs, grilled vegetables, and pork fillet.
