history
The Cave des vignerons de Tavel is in the purest Provençal style. It was built in 1937 when Tavel wines were labelled AOC. It is to date the only winery to be opened by a President of the Republic – Albert Lebrun in 1938. The Cave de Tavel produces half of the Tavel AOC wines, as well as Lirac, Côtes-du-Rhône Villages and Côtes-du-Rhône and stretches over 680 Ha..There are 140 producers, all involved in the day-to-day life of the winery and have their say in the investment decisions for making wines which frequently win medals and are regularly mentioned in wine guide.
Vineyard
Tavel surrounding area, near the villages of Rochefort-du-Gard and Pujaut.This wine "Domaine des Amariniers" is issued from clay and limestones. Vines : 40 years old - Yield :40Hl/Ha.
Winemaking
Tavel is an “original rosé” whose winemaking is completely different from any other Rosé. It has long macerations (48 hours), more like a red wine. After pressing, fermentation is led from 10 to 15 days at low temperatures (13°-14°C). Tavel is a blend of free run juice (which gives fruit aromas, freshness and acidity), and pressing juice (which preserves its richness, structure and strength). This single and original blend gives rise to Tavel wine, "1st Rosé of France".
Tasting notes
Eye: deep bright “partridge eye” ruby pink. Nose: red and white fruits combined. Mouth: fruity and mineral.
Food pairing
Enjoyable with an aperitif as well as a meal (better than white and red in succession), charcuterie, spicy Indian, Middle East, Asian and Provencal Cuisine, white meat and goat cheese.

2022
Another domaine produced under the auspices of the local co-op, the 2022 Tavel Domaine Le Puy d'Eole comes out of the chute with distinct notes of crushed stone, ripe raspberries and even a more savory note of tapenade. It's medium to full-bodied, perhaps a bit more streamlined than most Tavel wines, but concentrated and focused, with a coiled, vaguely citrusy finish.
