Vineyard
The vineyard of Saumur is located 150 miles west of Paris. Soil with clayey and silty sands. Several hard limestone rocks underlie the Méron slopes up to the fault of the Loudunais. This particular soil and subsoil has good draining capacity and early ripening potential. Vines : 45 years old - 16 acres - Yield : 50 Hl/Ha
Winemaking
Crushing and destemming. Cold settling for 24 hours. Vinification at low temperature (17 to 19°C) for 2 weeks. Racking and aging in stainless steel tanks on thin lees for 3 to 4 months. Bottled early and stored in the cellars dug out of the tufa, where it continues to age in the bottle, protected from the light and temperature variations.
Tasting notes
Pale gold with touches of silver. Suave nose of ripe fruit, William pear and white peach, with a touch of honey-sweet acacia-lime flowers and a hint of flintiness.
Food pairing
Fish with cream sauce, roast duck with peaches, Asian food, fresh goat's cheese; also ideal as an aperitif wine.

1-3 years.
