Just like chefs select ingredients, they meticulously choose terroirs and grape varieties to authentically showcase the unique flavors of each appellation. Their wines are crafted for immediate enjoyment upon bottling, featuring a fruity, expressive style with silky tannins. The final blends are created in collaboration with the Chefs Disciples d'Escoffier, ensuring a gastronomic harmony from the very beginning.
Vineyard
The vineyard parcels are nestled in the Dentelles de Montmirail, specifically within the "Grand Montmirail" sector.
Winemaking
At the start of fermentation, the must undergoes pumping over to maximize fruit flavor extraction. This is followed by a prolonged vatting period of 4 weeks, maintained at controlled temperatures between 80.6-86°F. 60% of the final blend undergoes aging for 12 months in large oak casks ("foudres") and demi-muids (400L).
Tasting notes
The wine presents a rich and complex aromatic palette, finishing fresh due to the calcareous soils. It boasts a long and refined finish.
