Cave de Tain is a family-driven cooperative with a legacy of winegrowing that spans four generations. Located at the base of the Hermitage hill, they cultivate 22 hectares alongside additional contributions from member winegrowers, focusing exclusively on wines from their own grapes. In 2014, they invested in advanced technology to enhance wine quality across all appellations, paving the way for innovations such as organic and sulfite-free wines. Committed to sustainability, Cave de Tain also fosters a new generation of winemakers who view themselves as active contributors to the winery’s mission. Vineyard
Situated in the northern part and on the right bank of the Rhône. Soil: Granite, covered by limestone, loess and chalk. Climate: Continental with a Mediterranean influence
Winemaking
Plot selection of old vines (45 years old). Each plot is vinified separately. Hand picked grapes. Gentle pressing, with protection against oxidation and selection of the best juice. Cold settling for 24h. Fermentation starts in vats at 18°-20°C ; the wine is run off into barrels during the fermentation. Malolactic fermentation for 70% of the wine. Maturing: In 400L oak barrels (25% in new barrels and 75% from 1 to 7 wines).
Tasting notes
Color : brillant and golden yellow Aromas : white fleshed fruits and white flowers, citrus fruits and aniseed notes. On the palate : nice freshness. Ripe fruits but minerality and saltiness are present. Finish is elegant with flinty, apricot and vanilla notes.
Food pairing
To be served with a chestnut soup with ceps. But a foie gras with figs or a fish tajin with dried fruits are also suitable. Very pleasant with a Pisadou cake or marrons glacés.
