Small, healthy bunches of grapes are selected from an old plot of Marsanne situated on the “lieu-dit” of “Beaume”. On average, vines are over 80. Harvest slightly later than other Hermitage white grapes (around 10 days later), slightly overripe. Only perfectly healthy grapes are hand-picked only by exceptional weather (no humidity at all). Grapes are carefully transported in fruit crates to the winery to avoid any bruising prior to the ambient air drying process, called “passerillage”, for about 45 days with excellent ventilation. They become like raisins, and concentrate in sugar and flavour, before they get pressed in November-December: juice looks like honey and undergoes fermentation in barrels, until it stops at an alcohol content of about 16% and a residual sugar of about 100 gr/liter.
Maturing: In barrels for at least 12 months
