Cave de Tain is a family-driven cooperative with a legacy of winegrowing that spans four generations. Located at the base of the Hermitage hill, they cultivate 22 hectares alongside additional contributions from member winegrowers, focusing exclusively on wines from their own grapes. In 2014, they invested in advanced technology to enhance wine quality across all appellations, paving the way for innovations such as organic and sulfite-free wines. Vineyard
Situated in the northern part and on the left bank of the Côtes du Rhone area. Soil: Granite and fluvio-glacial alluvial deposits, on terraces. Climate: Continental with a Mediterranean influence.
Winemaking
Small, healthy bunches of grapes are selected from an old plot of Marsanne situated on the “lieu-dit” of “Beaume”. On average, vines are over 80. Harvest slightly later than other Hermitage white grapes (around 10 days later), slightly overripe. Only perfectly healthy grapes are hand-picked only by exceptional weather (no humidity at all). Grapes are carefully transported in fruit crates to the winery to avoid any bruising prior to the ambient air drying process, called “passerillage”, for about 45 days with excellent ventilation. They become like raisins, and concentrate in sugar and flavour, before they get pressed in November-December: juice looks like honey and undergoes fermentation in barrels, until it stops at an alcohol content of about 16% and a residual sugar of about 100 gr/liter. Tasting notes
Color: Gold with topaze tints Aromas: Intense and complex flavour profile evoking quince paste, raisins, wallnut, honey, with a touch of safran. On the palate: Rich and opulent - flavours of the nose melted with candied orange peel. Extremely long, yet fresh finish, and overall very powerful without too much weight, nor sugar.
Food pairing
Foie gras on a toasted brioche-bread, blue cheese, candied fruit based desserts, or just for itself at the end of the meal.
