The family-run Domaine Michot has been crafting wines since 1890 and is ideally located in the heart of the Pouilly-Fumé appellation, in Saint-Andelain. Marielle, representing the fifth generation of winemakers, joined the estate in 2007 and officially took over in 2014. Dedicated to her craft, she emphasizes the core values of the estate: sharing, transparency, and sustainability. The winery is equipped with climate-controlled facilities, thermoregulated tanks, and systems designed to minimize water consumption. From harvest to bottling, they operate independently, carefully overseeing every step of the production process to refine each of their cuvées.
Vineyard
Production area: 2,55 hectares (0.42ha of young vines). Average age of vines: 28 years old+ young vines 4 years old. Soils: Kimmeridgian marls (80%) and clay-limestone (20%). mechanical weeding, hoeing and use of green manure. Curettage to limit the death of vine stocks (wood disease). Third year conversion to organic farming (phytosanitary treatment: cupper, sulfur and orange peel essential oils).
Winemaking
Harvest: mechanical September 16th and 17th and manual for young vines September 16th. Low pressure pressing (pneumatic press) - Cold stabilization for five days - Clarification - Alcoholic fermentation with selected yeast and control of temperatures. Light stirring - Maturing on fine lees -Two rackings - Filtration before bottling - No tartaric stabilization
Tasting notes
Appearance: Pale yellow with golden reflections. Nose: Fine and delicate, with notes of white-fleshed fruits, exotic fruits, and citrus. Palate: Consistent with the nose, citrus blends with indulgent and chalky notes. A lovely length for a wine of pleasure, ideal as an aperitif or paired with goat cheese. Aging potential: 3 years.
