Château La Rabotine, nestled in Sury-en-Vaux, is a historic estate built in 1600 by notary Louis Rabotin, whose name it still bears. Over the centuries, it witnessed remarkable events, including the sheltering of priests during the French Revolution by the Grangier family. After passing through various hands, the château was reclaimed in 2010, bringing it back into the family and restoring its connection to the vineyards. The estate spans 12 hectares across 19 parcels, benefiting from Sancerre’s finest terroirs. The vineyards are planted on Kimmeridgian clay-limestone (“Terres Blanches”) and pure limestone (“Caillottes”), creating elegant, mineral-driven Sancerre Blancs, while the iron-rich clay-limestone soils produce powerful and generous Sancerre Rouge and Rosé. Driven by a deep respect for nature, the estate is HVE Level 3 certified and follows organic farming principles, reducing chemicals and preserving soil health. Every step, from vineyard management to winemaking, is guided by a commitment to sustainability and biodiversity, ensuring that heritage, terroir, and craftsmanship shine in every bottle.
Vineyard
clay-limestone plot of Terres Blanches particularly well exposed. Simple Guyot pruning, disbudding, mechanical ploughing of the soils under the rows, grassing between the rows. They took the time to observe and accompany this very special plot. Its old vines demand vigilance and respect. The grapes give it back to us with their strong expression.
Winemaking
Manual harvest, pressing, cold settling, aging on fine lees for 12 months in 2000 liters “foudre” (huge oak vats) then in tank for 6 months.
Tasting notes
The first nose opens with intense aromas of rose petals and smoky notes. Then appear notes of white fruits, fresh rose but also minerality and spicy notes. The attack on the palate is rich with fleshy notes of yellow peaches. The finish is saline with floral notes of rose and a slight toasted side.
Food pairing
Ideal to accompany noble crustaceans such as lobster or scallops. Drink now or over the next 5 years at a temperature between 10 and 12 ° C.
