Château La Rabotine, nestled in Sury-en-Vaux, is a historic estate built in 1600 by notary Louis Rabotin, whose name it still bears. Over the centuries, it witnessed remarkable events, including the sheltering of priests during the French Revolution by the Grangier family. After passing through various hands, the château was reclaimed in 2010, bringing it back into the family and restoring its connection to the vineyards. The estate spans 12 hectares across 19 parcels, benefiting from Sancerre’s finest terroirs. The vineyards are planted on Kimmeridgian clay-limestone (“Terres Blanches”) and pure limestone (“Caillottes”), creating elegant, mineral-driven Sancerre Blancs, while the iron-rich clay-limestone soils produce powerful and generous Sancerre Rouge and Rosé. Driven by a deep respect for nature, the estate is HVE Level 3 certified and follows organic farming principles, reducing chemicals and preserving soil health. Every step, from vineyard management to winemaking, is guided by a commitment to sustainability and biodiversity, ensuring that heritage, terroir, and craftsmanship shine in every bottle.
Vineyard
Vines of 50 years on average. Clay-silt-limestone terroir. Simple Guyot pruning, disbudding, mechanical ploughing of the soils under the rows, grassing between the rows.
Winemaking
Manual harvesting, destemming, vatting for a maceration period of around 3 weeks with manual punching down and pumping over. Natural malolactic fermentation in 228 liters oak barrels for 10 months then aging in tank for 8 months.
Tasting notes
The first nose is marked by the notes of aging: woody, smoky, grilled aromas, notes of incense and laurel. With aeration appear fruity aromas of blueberry pie, cherry but also notes of chocolate and spicy notes: pepper and cinnamon. The attack is structured by the tannins of the wood and the grilled notes but also by the tannins of the grape. The mid-palate brings more delicacy and sweetness with notes of roasted black fruits and dried fruits. The finish is spicy and marked by the aging.
Food pairing
Ideal to accompany red meats, a duck breast, burgers or cheese. Drink now or over the next 10 years at a temperature of around 15 ° C.
