The family-run Domaine Michot has been crafting wines since 1890 and is ideally located in the heart of the Pouilly-Fumé appellation, in Saint-Andelain. Marielle, representing the fifth generation of winemakers, joined the estate in 2007 and officially took over in 2014. Dedicated to her craft, she emphasizes the core values of the estate: sharing, transparency, and sustainability. The winery is equipped with climate-controlled facilities, thermoregulated tanks, and systems designed to minimize water consumption. From harvest to bottling, they operate independently, carefully overseeing every step of the production process to refine each of their cuvées.
Vineyard
Area in production: 0.75 hectares Planting density: 6,900 vines/ha Average vine age: 35 years Terroir: 100% clay with flint Natural grass cover, mechanical weeding (inter-row), mowing within the row. Winter pruning to limit vine death (due to wood disease). Debudding. 3rd year of conversion to organic farming.
Winemaking
Low-pressure pressing (pneumatic press). Cold settling for 5 days. Racking. Alcoholic fermentation with selected yeasts and temperature control. Aged on fine lees for 5 months in stainless steel tanks. Two rackings. No tartaric stabilization.
Tasting notes
Appearance: Pale yellow with golden highlights. Nose: Expressive, with flint and spices (pepper and licorice), complemented by subtle notes of grapefruit and white peach. Palate: Full-bodied with bright freshness. The spicy notes return with a marked minerality. Pineapple and peach emerge mid-palate. Aging potential: 5 to 7 years

The 2023 Pouilly-Fumé 'Minerale' delivers a vibrant profile and striking mineral edge, offering notes of ripe citrus, white peach and hints of tangy pineapple, all wrapped in a delicate veil of flinty smokiness. The palate is sleek and expressive, balancing crisp orchard fruit with bright citrus, backed by a mouthwatering streak of acidity and a gentle saline edge adding lift and tension all leading into the finish which lingers with touch of chalkiness. This is a refined and versatile Sauvignon Blanc.
