The family-run Domaine Michot has been crafting wines since 1890 and is ideally located in the heart of the Pouilly-Fumé appellation, in Saint-Andelain. Marielle, representing the fifth generation of winemakers, joined the estate in 2007 and officially took over in 2014. Dedicated to her craft, she emphasizes the core values of the estate: sharing, transparency, and sustainability. The winery is equipped with climate-controlled facilities, thermoregulated tanks, and systems designed to minimize water consumption. From harvest to bottling, they operate independently, carefully overseeing every step of the production process to refine each of their cuvées.
Vineyard
Area in Production: 0.205 hectares Planting Density: 6,900 vines/ha Average Vine Age: 35 years Terroir: 100% clay with flint Natural grass cover, mechanical weeding (inter-row), mowing between rows. Winter trunk cleaning to prevent vine dieback (wood disease). Debudding. Reasoned use of phytosanitary treatments.
Winemaking
Whole-cluster, low-pressure pneumatic pressing. Cold settling for 24 hours, then racking. Alcoholic fermentation in 500L oak barrels (one previous use) with temperature control. Aged on lees in barrels for 12 months with regular bâtonnage, followed by 6 months on fine lees in stainless steel tanks. One racking. No fining, no filtration.
Tasting notes
Appearance: Pale yellow with golden reflections. Nose: Lightly oaked and vanilla-scented, rich with notes of honey and ripe fruit (peach compote). Palate: Broad and rich. Subtle integration of vanilla and oak, with spice notes returning. Mid-palate reveals honey and peach. A saline finish typical of flint soils.
