Vineyard
Set in the heart of the Poitou at the edge of the Southern Loire Valley.The vineyards are situated in two different areas, both on clayey jurassic. Vines : 30 years - 490 hectares
Winemaking
The Sauvignon is carefully pressed immediately upon arrival at the winery. First of all part of the grapes undergoes a fermentation for a few hours at a low temperature in order to emphasize the aromas./nThe alcoholic fermentation is made under controlled temperature between 18 to 20°C in order to preserve the aromas. 12 to 14 afterwards, the wine is racked and kept on its lees for one or two months.
Tasting notes
Pale yellow with green tints. Intense and typical, fresh fruit, blackcurrant and grapefruit.
Food pairing
This wine is a perfect accompaniment with oysters and smoked salmon.
