history
The Cave des vignerons de Tavel is in the purest Provençal style. It was built in 1937 when Tavel wines were labelled AOC. It is to date the only winery to be opened by a President of the Republic – Albert Lebrun in 1938. The Cave de Tavel produces half of the Tavel AOC wines, as well as Lirac, Côtes-du-Rhône Villages and Côtes-du-Rhône and stretches over 680 Ha..There are 140 producers, all involved in the day-to-day life of the winery and have their say in the investment decisions for making wines which frequently win medals and are regularly mentioned in wine guide.
Vineyard
The Domaine du Vieil Aven is in the Rhone Valley 15km from Avignon and Châteauneuf-du-Pape. Its geographical position in the heart of the Tavel vineyards is an indication of its deep local roots. Limestone and smooth pebbles. Vines :35 years old - 15 Ha - Yield : 40Hl/Ha - 2.45 T./acre
Winemaking
Tavel is a unique rosé produced by a type of vinification which makes it completely different from any other rosé and is more like that of a red wine with long maceration of 48 to 72 hours. After pressing, fermentation takes 10 to 15 days at low temperature (13-14°C) .Vinification and storage in stainless steel vats before bottling
Tasting notes
Eye: deep bright "partridge eye" ruby pink. Nose: woodland fruit - cherry. Mouth: powerful - flinty, long spicy finish. It is a blend of drip juices which give it the requisite aromas, fruit, freshness and acidity, and pressing juices which preserve its richness, structure and strength.
Food pairing
Enjoyable with a nourishing aperitif as well as a meal (better than white and red in succession), spicy Asian food, tajines, paellas and Provençal dishes, white meat and dry goat's cheese.
Aging potential
Drink while young. 1 to 3 years.
Grape varieties
Grenache noir (50%) - Cinsault (20%) - Clairette (6%) - Picpoul and Bourboulenc (7%) - Syrah, Mourvèdre, Old Carignan (17%).

Whiffs of strawberry candy and graphite introduce this deeply concentrated, intensely pink Grenache-dominant blend (accented by smaller amounts of Cinsault, Clairette, Syrah and Picpoul). It's a rich, full-bodied rosé packed with flavors of black cherry and raspberry sorbet but refreshing and mineral too. It's delicious now but the wine should drink well through 2022, in any season.
