Vineyard
Domaine de Matabrune is located in a small, shallow valley in Restigné, used to belong to the St Martin's collegiate church. The vineyards face South for maximum exposure to the sun. The relatively deep clay subsoil allows the vine roots to grow very deep. The surface of the sandy topsoil is scattered with small flints, gravel and pebbles (Quaternary alluvial deposits), which warm up rapidly in the sun and help the grapes ripen early. Vines : 40 years - 10.63 a - Yield : 35Hl/Ha - 2.15 T. /acre
Winemaking
The grapes were completely destemmed and fermented at 80.60°F in temperature-controlled stainless steel vats. The wine was pumped over and the cap punched down daily during vatting. The wine was run off after 10 days on the skins and transferred to epoxy. After the fermentation process, the wines were put to age in our cool cellar.
Tasting notes
Deep ruby-red. Very expressive, complex bouquet, featuring fresh fruit aromas (blackberry) with hints of violet, bitter chocolate and coffee. It starts out full-bodied and soft on the palate, following through with jammy red-berry fruit.
Food pairing
Grilled or roasted red meats, game, flavorful roast poultry (e.g. turkey with cranberry sauce).
