Château l’Ermite d'Auzan was founded in the 11 century by the Eremites of Ste Cécile d’Estagel Abbay. It is situated on the pilgrimage route of Santiago de Compostella. The estate's total surface covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. Michel and Jérôme Castillon, the estate's owners, are counted amongst the Rhône valley's most dynamic and talented winegrowers .Today , Tanguy, Jérôme’s son, 4th generation at Château L’Ermitage, has joined them and shares their passion for the vineyard and winemaking. The work that they accomplish allows the grape to breathe out and the use of oak barrels for ageing is restricted as much as possible. The respect of the environment is a priority for the Château l'Ermite. The domaine's certification in both organic and biodynamic farming attests to their daily commitment to respecting the soil and the plants.
Vineyard
Saint-Gilles. South facing slopes of the Costières de Nîmes. The Costières de Nîmes are situated in the Rhône valley's most southern part, on the opposite bank of the Rhône with regards to Chateauneuf-du-Pape. Rolled Durance pebbles (the Durance river flowed through the valley well before the Rhône). Vines : approx. 25 years old - 1.5 ha - Yield : 32 hl/ha
Winemaking
100% destemmed - The wine goes into 400 liters new barrels just after the end of the fermentation. The malolactic is done into the barrel.The ageing last for 2 years into new barrel.
Tasting notes
This powerful, elegant wine that is long on the palate and not woody perfectly expresses the depth of Costières de Nîmes soils and in particular that of Château l’Ermitage.
Food pairing
Venison, capon, loin of lamb with Provence herbs, burbot filet with garlic crust.
Aging potential
6 to 10 years.
