Vineyard
the soil is very shallow in most places, with soft chalk mostly at less than 23in from the surface. The whole creates a moderate, but fairly regular water supply, excellent for producing high-quality grapes.. Vines : 40 years old - Yield : 50 Hl/ Hectare.
Winemaking
Once the grapes have been completely destemmed and crushed, they are fermented at 82 °F in temperature-controlled stainless steel vats. Pumping-over three times a day at the beginning of vatting and a total of 15 days on the skins extracts the full tannishs. The wine is transferred to our cellars, 82 ft. underground, for malolactic fermentation in tiledvats. It continues to age peacefully, protected from the light and temperature variations, for 6-10 months before bottling.
Tasting notes
Very spicy, toasty bouquet, with hints of red-berried fruit and rosemary. The initial impression on the palate is round and very full-bodied, with tannins that are already softening and a spicy aftertaste.

With white meats, cheese and salads.
