Tasting notes
Beautiful ruby-red with purplish highlights . Open, attractive nose of red fruits (blackcurrant, redcurrant).Well- structured, warm and powerful on the palate with delicious fruit flavors and a great balance.
Food pairing
Served slightly chilled (57-61 °F), this wine fits perfectly with fish in sauce, roast poultry, well-marbled beef and soft-ripened cheeses.

Vineyard
The vineyard is located in the heart of the Saumur Champigny's Appellation, West of Paris. The vines grow on a limestone plateau (tufa) overhanging the Loire River with a nice exposure. Yield : 50 hl/ha
Winemaking
Green pruning (sever bud thinning, leaf plucking and bunch thinning) is done to obtain concentrated grapes. Grapes picked when fully ripe as ascertained by tasting.Traditionnal winemaking. A long maceration (20 days) with a gentle extraction of polyphenols/nAgeing for 6 to 8 months in their underground gallery at a cool, constant temperature before bottling ( 6 to 8 months).
