The Vouvray "Excellence" cuvée is made from grapes grown in vineyards located on a limestone plateau, overlooking the Loire River. The Chenin Blanc grapes, harvested with great care, sublimated by the chalk terroir and aged in our tufa cellars for over two years express their quality in a lovely aromatic complexity and unusual elegance. The grapes are pressed slowly in a pneumatic press and the free-run juice ferments separately. The must is left to clarify for at least 24 hours, and then fermented at low temperature to enhance its aromatic delicacy; alcoholic fermentation is stopped by chilling the wine to retain some residual sugar. The wine ages for approximately 6 months before bottling.
