Vineyard
East of Bordeaux, near Bergerac, on the right bank of the Dordogne river. The gravel with a deep layer of ferruginous clay, locally called "tran", is well-known for giving a flintiness to wine. Vines: over 20 years old - 22 a - Yield: 50 Hl/Ha - 3.05 T. per acre
Winemaking
The destemmed and crushed grapes are macerated for 4 weeks at 28°C. During fermentation, frequent
pumping-over and one rack and return in the early stages ensure gentle gradual extraction of its phenolic structure. After malolactic fermentation, the wine is divided into three batches to be matured for 12 months in French oak barrels: one-third in new barrels, one-third in second-fill barrels and one-third in third-fill barrels.
Tasting notes
The Cabernet varietals give Les Farcies du Pech a complex nose where coffee, tobacco, cinnamon and black pepper are harmoniously blended. Full and well-structured, this Pécharmant has pleasantly loosened up and filled out with time.
Food pairing
This powerful deep red wine will form an ideal accompaniment to terrine dishes, roast or casseroled poultry, and cheese.
