Vineyard
Tayac is located 10 miles east of Saint Emilion in the Bordeaux-Côtes de Francs area. the vines grow in sandy and stony soils covering the clayey limestone hills between Lussac and Castillon. The sand and stones provide sufficient drainage and allow the roots to penetrate into the characteristic subsoil. Vines: 30 years old - 21 a - Yield: 50 Hl/Ha - 3.05 T. per acre
Winemaking
Traditional vinification and careful control at key stages of production bring out the genuine taste of the terroir. The grapes are sorted on their arrival at the winery. During fermentation, frequent pumping-over and one rack and return in the early stages, guarantee a soft and progressive extraction of the phenolic structure. 12-month maturing in French oak barrels, with regular stirring, add delicacy to the strength of this wine. It is naturally fined with egg white after maturing.
Tasting notes
A complex aroma of ripe berries, thyme and a hint of vanilla informs this Bordeaux. It is a well-balanced wine revealing sweet blackberry flavors and some savory notes. A toasty oakiness is supported by elegant tannins. Aged in barrels for one year.
Food pairing
Château Nardou is a food-friendly wine. It goes particularly well with gamey meats, savory dishes, cooked fresh duck liver, duck ?magret? or can just be enjoyed on its own. This Bordeaux is best served at room temperature and to given a little time to breathe.
