Vineyard
Backed by the side of the Savoyarde, the slopes have a southern exposure. Clay and limestone, south-east facing slopes at a height of 300 metres.
Winemaking
They are hand harvested. 5 to 7 days in the vat, then the wine is drained off and isolated for fermentation. Once the alcoholic fermentation is complet, the malolactic (second fermentation) is triggered, which turns the malic acid in the grapes into lactic acid, thereby reducing the acidity of the wine and avoiding fermentation in the bottle. Ageing stainless steel tank.
Tasting notes
Color crimson with blueish tints. Clean, with delicate tannins, characteristic of the Mondeuse variety. A subtle final taste of pepper.

Should be drunk ideally between 3 to 5 years.
