Domaine Fourrey et Fils is a family estate spanning 20 hectares, with 18 hectares currently in production, located in the heart of Chablis. The winemaking process artfully blends traditional Chablisian methods with modern techniques to highlight the unique characteristics of the Chardonnay grape. The estate has been passed down through four generations, from father to son. Since 1992, Jean-Luc has led the winemaking efforts alongside his parents, following his studies at the Lycée de Beaune, where he earned a degree in winemaking techniques. One of his primary goals upon returning from school was to enhance bottle sales. For the past ten years, his sister, Marie-José, has managed customer relations and is now actively involved in promoting wine tourism in the Chablis region.
Vineyard
"Héritage" vineyard in Côte de Lechet spans 0.40 hectares. The vines, aged 55 years, are planted in clay-limestone soil. This very sunny terrain features steep slopes. At the base of the vines, raw Kimmeridgian marls are present.
Winemaking
The harvest is conducted mechanically, followed by gentle pressing of the grapes. Settling then occurs, lasting between 24 and 72 hours. This is followed by fermentation in thermoregulated stainless steel tanks. The aging process continues with 50% in stainless steel tanks and 50% in sandstone amphorae. The wine is bottled 12 months after the harvest.

Dry white wine. This is a premier cru very mineral and with a salty taste.
