Domaine Fourrey et Fils is a family estate of 20 hectares with 18 in production in the heart of Chablisian.The wine-making combines the Chablisian tradition with the modern techniques, in order to reveal local characteristic out of the Chardonnay grape.The estate is going through their fourth generation from father to son. Since 1992, Jean-Luc is in charge of the wine-making with his parents after his studies in Lycée de Beaune, where he obtained a degree in techniques winemaking. One of its major objective, when he came back after school, was to improve the sales of bottles. During ten years, his sister, Marie-José, was in charge of the customer relationships. She is now involved in Chablis region wine tourism.
Vineyard
The 7 hectares vineyard produces six different Chablis Premier Cru wines: Vaillons, Côte de Lechet, Fourchaume, Beauroy, Mont de Milieu, Les Fourneaux. The main substrata is Jurassic limestone. The rock contains deposits of tiny fossilized oyster shells which remind us that Burgundy once lay beneath a warm ocean. Vines : 3.5 ha - Yield : 58 hl/ha
Winemaking
Maturity test are executed in differents plots to decide the best time to begin harvest-grape. Fermentation and breeding in stainless stell tank./nIn stainless steel tank.
Tasting notes
Color is rather light - pale gold or greeny-gold. Nose very fresh, lively and mineral with flint, green apple, lemon, underbrush and field mushroom. Notes of lime-flower, mint, and acacia occur frequently, as well as aromas of liquorice and freshly-cut hay. Time deepens the color and adds notes of spices to the bouquet.
Food pairing
This wine is a true boon to fine food. It can be enjoyed young (2-3 years old) with fish or poultry terrines. With grilled or poached fish and asparagus, wich is normally difficult to match. But don't forget exotic cuisine : it can handle curries or tandoori dishes and it also balances out the mellow and subtle textures of sushi. Even though it harmonizes well with goat cheeses, as well as Beaufort, Comté, or Emmental, you may still simply drink it as splendid pre-dinner drink.
