In the heart of Burgundy, the Domaine de Suremain is a seven-generation Burgundy family estate located in the center of the village of Mercurey at the Château du Bourgneuf.Its 18ha estate is planted with Pinot Noir for the Mercurey Rouges appellations and Chardonnay for the Mercurey Blancs. The vines are worked in a rational way in order to preserve the natural environment as much as possible. Harvesting is done by hand and vinification is carried out raw by vintage.The Mercurey appellation is the most renowned of the Cote Chalonnaise, and one of the most important appellations of Burgundy. Mercurey is named after the messenger of the Gods of the Roman mythology, Mercury because the Romans have dedicated a temple said to be built on the site of its church

East, on the top of the hillside. Rather clayey soils with some blue marl. Vines : 2.30 acres
Winemaking
The Harvest is done by hand with sorting of grapes. Destemming and after a traditionnal vinification with 10 to 15 days in wooden open tank depending the vintage..1 year in barrel ( 10 to 15 % in new barrels). Bottling 15 months after.
Tasting notes
This white Mercurey is rich with a mineral trend on its aromas of hazelnut and honey.
Food pairing
It can be enjoyed young as an aperitif or with shellfish. If you have enough patience to wait, you will discover all the fullness of a great Chardonnay from Burgundy. It will match perfectly well with large fishes (roasted bar).

Lemon and dried hay on the nose of this wine suggest both ripeness and freshness. The palate plumps for freshness and presents a serene and bright body, still with a flinty whiff of reduction.
