history
Château l’Ermite d'Auzan was founded in the 11 century by the Eremites of Ste Cécile d’Estagel Abbay. It is situated on the pilgrimage route of Santiago de Compostella. The estate's total surface covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. Michel and Jérôme Castillon, the estate's owners, are counted amongst the Rhône valley's most dynamic and talented winegrowers .Today , Tanguy, Jérôme’s son, 4th generation at Château L’Ermitage, has joined them and shares their passion for the vineyard and winemaking. The work that they accomplish allows the grape to breathe out and the use of oak barrels for ageing is restricted as much as possible. The respect of the environment is a priority for the Château l'Ermite. The domaine's certification in both organic and biodynamic farming attests to their daily commitment to respecting the soil and the plants.
Vineyard
Saint-Gilles. South facing slopes of the Costières de Nîmes. The Costières de Nîmes are situated in the Rhône valley's most southern part, on the opposite bank of the Rhône with regards to Chateauneuf-du-Pape. Rolled Durance pebbles (the Durance river flowed through the valley well before the Rhône). Vines : 25 years old - 51 acres - 50 Hl/Ha (2.5T/acre).
Winemaking
Cooling of the harvest (reduction of 60°F). 100% destemmed - Pre-fermentation period of 3 days to extract the anthocyans and aromatic components. 4 delestages (rack and return) and thermoregulated fermentation. 6 months in a large concrete vat.
Tasting notes
Fresh and very fruity. A "thirst-quenching" wine that is a little tannic but mellow.
Food pairing
Barbecue, T-bone steak, lamb chops, "cévenole" chitterlings sausage, matured cheeses.
Aging potential
To be drunk straight away or to be aged in the cellar.

This fun red, which is introduced with an expressive core of blue fruit, is all about fresh, unadorned fruit with a kiss of singed sandalwood. Stays pure and refreshing, thanks to juicy acidity, crushed stone, and black pepper dusting. Syrah, Grenache and Mourvèdre. Drink now through 2026.
