Vineyard
The wine area of the Saumur Champigny “Les Poyeux” depends of the town of Chacé, a small village located on the grand saumurois. This Lieu-dit is one of the most famous of the region for the production of AOC Saumur-Champigny, whose wines are characterized by a velvety taste and a unique concentration.Tuff soil. Carbonate formations of Turonian limestone. It is mostly shallow, with soft limestone at less than 23 inches from the surface, resulting in a moderate, but fairly regular water supply, ideal for growing quality wine.
Winemaking
After crushing and total destemming, the grapes are put into temperature controlled stainless steel vats, where the temperature rises to 83°F. The vats are pumped over three times a day at the beginning of maceration. Malolactic fermentation in their cellars at 25 meters of depth./nThis wine is aged for 6-10 months in a quiet, dark, underground gallery at a cool, constant temperature before bottling.
Tasting notes
Dark red color, almost black, very intense. Complex and elegant nose mixing very ripe red fruits (blackcurrant, plum) and empyreumatic notes (grilled, caramel). Supple attack, fine and rich in mouth, beautiful expression of sugar. Harmonious, fleshy and well-balanced wine with a menthol final.
Food pairing
Red, roasted or grilled, meats, poultry in sauce. Serve at 54-58 °F.

2021
The 2021 'Les Poyeux' is a lovely showing, offering wonderful freshness and balance as it opens to aromas of dark berries and plums followed by tobacco, spices and crushed stones. This Medium-bodied red is backed by a fine silky texture as the underlying acidity keeps it fresh and inviting through the mineral driven finish.
