history
It was in 1989 that the adventure of the Vignobles du Paradis began, with the ESAT les Chevaux Blancs planting from the 1st hectare to the Clos de la Niverdière. The following year the planting of vines continued, with the installation of a first winery on the Clos. The Vignobles du Paradis started with the plantation of 2 ha. Today the estate cultivates 35 hectares of AOC Chinon red and rosé and soon white.
Vineyard
Domaine de la Lysardière in Chinon (North-West France) benefits from a temperate, oceanic climate and the South-facing slope vineyards have very good sun exposure. The vines are planted on a silt-clay terroir with limestone subsoil.
Winemaking
The grapes are fully destemmed, macerated for 6 hours, and fermented in stainless steel vats at 14°C to preserve the fresh aromas/n Aged on the lees for 4 months with regular bâtonnage (lees stirring).
Tasting notes
An easy-drinking wine with freshness on the palate and a luscious peach and citrus bouquet. A dry, well-balanced rosé. A round, soft mouthfeel with good acidity on the aftertaste and hints of grapefruit.
Food pairing
Best served chilled (8 - 12°C). Ideal as an aperitif, it makes a perfect match with salads, white meats, grilled meats, fish, and seafood.
