Château de Millet is located in Eauze, in the Gers, in Gascony and in the heart of Armagnac.
Initially devoted to mixed farming and Armagnac production, the estate now reserves 80 hectares of vines for the production of Côtes de Gascogne "Domaine de Millet" wines.
Francis and Lydie Dèche, owners, follow in the footsteps of the previous five generations by committing themselves to a policy of quality: traditional grape varieties, rational cultivation of the vineyard and constant evolution in the
methods and means of vinification.
With their daughter Laurence, who joined them in 1999, they market a tasty and varied range wines that are just waiting to be discovered.
Vineyard
Le Domaine de Millet is just situated outside the town of Eauze in the Gers.The vines enjoy a north westerly position on the green hills where the soil alternates between clay limestone and the sandy soils known as 'sables fauves'. Vines : 20 years old - 123 Acres
Winemaking
Harvested and destalked at the same time, the grapes are drained into tanks that are hermetically protected from the harmful effects of oxygen. The fresh grape must is stabilised in cold temperatures for 6 days which allows the aromas in the grapes to fully express themselves whilst in turn slightly reducing the acidity. The fermentation takes place under strict temperature control over 2 weeks. The wine is bottled early, as soon as it displays its full potential of freshness and elegance.In stainless steel vats.
Tasting notes
Its subtle bouquet reveals floral notes, with acacia, pear and hints of sweet almond.Fresh and intense palate with rich flavor the give way to a pleasant full and rounf finish.
Food pairing
Serve at 48°F to 50°F. Excellent with cooked sheefish, fish in sauce, white meat, fresh goat's cheeses.
