Château l’Ermite d'Auzan was founded in the 11 century by the Eremites of Ste Cécile d’Estagel Abbay. It is situated on the pilgrimage route of Santiago de Compostella. The estate's total surface covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. Michel and Jérôme Castillon, the estate's owners, are counted amongst the Rhône valley's most dynamic and talented winegrowers .Today , Tanguy, Jérôme’s son, 4th generation at Château L’Ermitage, has joined them and shares their passion for the vineyard and winemaking. The work that they accomplish allows the grape to breathe out and the use of oak barrels for ageing is restricted as much as possible. The respect of the environment is a priority for the Château l'Ermite. The domaine's certification in both organic and biodynamic farming attests to their daily commitment to respecting the soil and the plants.
Vineyard
Saint-Gilles. South facing slopes of the Costières de Nîmes. The Costières de Nîmes are situated in the Rhône valley's most southern part, on the opposite bank of the Rhône with regards to Chateauneuf-du-Pape. Rolled Durance pebbles (the Durance river flowed through the valley well before the Rhône).Vines : 20 years old - 5 acres - Yield : 2.5T/acre.
Winemaking
Cooling of the harvest (reduction of 12°C / 54°F). The must is cooled to 8°C (46°F) for natural clarification. Vinification at a low temperature. 3 months of fermentation and lees stirring in the barrel./n3 months of ageing in the barrel.
Tasting notes
Rich, long on the palate, with an excellent balance and a good acidity.
Food pairing
As an aperitif. It may also be served with dishes made with cream and white meat.
Aging potential
May be drunk as from now and for three years.

Fermented and aged three months in French oak barrels, this full-bodied white introduces itself with inviting hints of smoke, brioche and hazelnuts. A blend of 70% Roussanne, 20% Viognier and 10% Grenache Blanc, it offers rich, creamy layers of white peach and lemon flavors edged by a bracing mineral finish. Delicious young, the wine should hold beautifully through 2025.
