Château l’Ermite d'Auzan was founded in the 11 century by the Eremites of Ste Cécile d’Estagel Abbay. It is situated on the pilgrimage route of Santiago de Compostella. The estate's total surface covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. Michel and Jérôme Castillon, the estate's owners, are counted amongst the Rhône valley's most dynamic and talented winegrowers .Today , Tanguy, Jérôme’s son, 4th generation at Château L’Ermitage, has joined them and shares their passion for the vineyard and winemaking. The work that they accomplish allows the grape to breathe out and the use of oak barrels for ageing is restricted as much as possible. The respect of the environment is a priority for the Château l'Ermite. The domaine's certification in both organic and biodynamic farming attests to their daily commitment to respecting the soil and the plants.
Vineyard
Saint-Gilles. South facing slopes of the Costières de Nîmes. The Costières de Nîmes are situated in the Rhône valley's most southern part, on the opposite bank of the Rhône with regards to Chateauneuf-du-Pape. Rolled Durance pebbles (the Durance river flowed through the valley well before the Rhône). Age of the vines : 25 years. Yield : 30 hl/ha
Winemaking
Manual grape harvest with selective sorting (40°F) 100% destemmed Fermented in wood vat of 40hl Aged for 1 year in a tapered wood vat of 40 hl.
Tasting notes
Wine of character with crunchy fruit on the palate. It is juicy and has a nice velvety texture.
Food pairing
Red meat (prime rib, lamb chop with Provence herbs), game, farm cheeses.
Aging potential
Ageing potential : 5 - 10 years.

Ripe and focused, with a beam of warm cassis and plum puree flavors, flanked by subtle alder and hot stone notes. The finish reveals a leathery tug. Very solid.
