history
Dune is the result of a tight cooperation between Jérome Castillon from Château l'Ermitage and a famous winery from Aigues-Mortes in Camargue .The soils are very sandy in this Region, producing wines with a lot of finesse. This wine is a great addition to Jérome Castillon's range, offering on top of its 'gastronomic" Château l'Ermitage Rosé, a wine that you can enjoy everyday on a terrace.
Vineyard
In 2004 , the brand Dune is created by the Cooperative Winery des Sablons . The vine is cultivated on Rhodanian sand dunes,on sea sand and sand coming through the wind.
The landscape is unique between lagoons and salt marshes.
The sand is very homogeneous, at least 90% is almost free of clay and silt.
The marine influence is very marked.
Sabledoc has been commited to an environnemental agreement " Hight value environment" since 2015 harvest.Vines : 15-20 years old - Yield : 34 hl/acres.
Winemaking
Cooling of the harvest. Soft pressing and strict sorting of the juices.Static settling at 50 ° F.Thermo- regulated fermentation ./nAgeing on the lees during 5 months.
Tasting notes
Pale and delicate robe. Delicate nose with grapefruit and white peach notes. Fresh and soft mouth with beautiful balance.
