The Cave des Producteurs de Vouvray was created in 1953, at the initiative of a small group of wine growers. The initial project was to pool their resources and create a production tool able to make wines in sufficient volume to penetrate new markets, at the same time preserving a high level of quality which was essential to the commercial development of Vouvray wines, and more particularly the sparkling wines. Sixty years later, the adventure continues with 30 wine growers, who work together 400 ha of vineyards, distributed over the whole Vouvray Appellation area.
Vineyard
Located at the East of Tours, the Vineyard of Vouvray is spread on 2000 Ha on a clayey and chalky soil. The Chenin blanc (also called « Pineau de loire ») is very well exposed on the table-land dominating the Loire river. The grapes are picked up at nice maturity allowing a nice balance between freshness and roundness.
Winemaking
Pressing, light must racking, then slow fermentation at low temperature (18°C) . /nMaturation on fine lees during 6 months, then bottling at springtime. Residual sugar after fermentation: 20g/L
Tasting notes
With a gold color, this wine is dry and smooth. It develops very nice citrus and fruity notes (peach, pear) as well as flower aromas (accacia). The wine is round and fruity, well balanced and end up by a fresh final.
Food pairing
To served chilled 10-12°C, It will suit aperitifs, fishes in sauce, white meat, ham , and specific cheese (such as goat cheese.)
