The Famille Castillon has an estate that covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. Michel and Jérôme Castillon, the domain's owners, are counted amongst the Rhône valley's most dynamic and talented winegrowers. The work that they accomplish allows the grape to breathe out and the use of oak barrels for ageing is restricted as much as possible. As mentioned above, today it’s the ninth generation of the « Castillon family » that rule this domain in “Costières de Nîmes",Through its knowledge and its experience, the “Castillon family” run the fantastic terroir of the southern slope of the appellation. Taking its benefits from a southern exposure and a Mediterranean maritime breeze, this terroir permits as much to keep an aromatic freshness on white wines as being the perfect terroir for the “Mourvèdre”.
The “Cocotte” cuvee is made from a selection of the most qualitative plots that historically belong to the family.. Rolled Durance pebbles (the Durance river flowed through the valley well before the Rhône). Vines : 25 years old - 51 acres - 50 Hl/Ha (2.5T/acre).
Cooling of the harvest (reduction of 60°F). 100% destemmed - Pre-fermentation period of 3 days to extract the anthocyans and aromatic components. 4 delestages (rack and return) and thermoregulated fermentation./n6 months in a large concrete vat.
Tasting notes
Fresh and very fruity. A "thirst-quenching" wine that is a little tannic but mellow.This wine symbolizes the Castillon's capacity to extract the most from their soils with honesty and greatness.
Food pairing
Barbecue, T-bone steak, lamb chops, "cévenole" chitterlings sausage, matured cheeses.
Aging potential
To be drunk straight away or to be aged in the cellar.
