history
The Dubard Family is for more than 30 years, the most famous producers of refreshing and reasonably priced wines in South-West France. The family members offer differing personalities of graduate oenologists, wine makers and viticulturists who together make up a dynamic and passionate team that has been renowned in the Bergerac wine region for decades. Being receptive to their terroir, combining common sense and long experience with ceaseless wine-making and viticulture: these are the founding principles on which the family has relied in their exceptionnel cuvées. They are also ongoing on the environmental label "HVE" (High Environmental Value).
Vineyard
Light hillside soils, on which a thin layer of clay significant amount of flint stone. On the slopes that face the shows a rising sun, a light de-leafing was carried out in September.
Winemaking
The phenol extraction is run in aqueous phase, rather in the first third of the alcoholic fermentation. A fortnight postfermentation maceration allows to continue a soft extraction of the most delicate tannins. After the malolactic fermentation, only the free-run juice is transferred into 500-litre terra cotta amphoras. After 8 months in amphoras, Juste Terre is then aged in a stainless steel vat for 4 months.
Tasting notes
The presence of flint stones shows through an obvious minerality on the palate. Tannins from Cabernet franc, naturally deep & intense, are refined by a limited oxygen input due to the porosity of terra cotta. On the palate it is a revelation of density and silkiness: Juste Terre is pure velvet !
Food pairing
Best served decanted (65°F) with red meat, duck (magret, confit, foie gras), game or cheese.

Aged in clay amphorae after fermentation, this wine is full of ripe tannins and perfumed black fruits. It's still young, with exuberant freshness and chewy tannins that give life to the fruit. Editor's choice
